Vegan blueberry, cherry, and sugar plum cobbler

Thursday felt like it was one thousand degrees.  And I am not exaggerating.  Summer weather can easily get on my nerves....but then I remember all the delicious fruit it brings and I change my mind!  I made a super yummy and surprisingly healthy cobbler!  So, celebrate the fact that were back to two-digit degree weather by making this incredible cobbler!

Two Things

Yesterday I called in sick....even though I wasn't sick.  I know, so irresponsible.  I sat on my bed trying really hard to be responsible by brainstorming "real" reasons for why its was okay to stay home and just sleep all day but I couldn't.  But I decided to do it anyways.  Please don't judge.

The good thing about this completely undeserved day off was that I got to make Kombucha and now I get tell you ALL about it! And I also get to talk way to much about what I made for lunch cause it was delicious :)

Sooo, I had kale for lunch yesterday!! Surprised? Im not.  But, it was especially good, so I thought I'd share.  Here it is:


I started with some lovely, delicious, incredible kale.

Battle of the Bands!!

This Sunday I went to the Hudson Valley Battle of the Bands competition.  It was awesomeee for a number of reasons.  Firs of all, it was part of the JBFCS Hudson Valley Bike Ride, which is a fundraiser for JBFCS, a non-profit mental health agency.  Second of all, my good friends and amazing musicians make up on of the bands that participated, The Kind.  And lastly, I got to spend the entire day with my family and good friends AND got to listen to incredible music for free...what could be better!!

Wahoo the first post!! Pretty places, kale, and Maggie

Let me being by saying that this blog had a previous life.  It used to talk about cool first year college experiences, but it never went past the second post.  So, I decided to recycle it and give it a new life! But, to make sure it doesn't forget (that's right, this blog is a boy) who it used to be I kept the same title.  So if you were thinking that the title doesn't really fit, it's probably because it really doesn't.

So let us (actually) begin! This past weekend, I spent a few days in Sullivan County.  While I was there, I visited one of the most beautiful and magical places I've been to, the Mongaup Falls Reservoir.
